Who doesn’t love cupcakes? Well, this vegan is CRAZY about her cupcakes! And let me tell you, it’s darn near impossible to find cupcakes in stores made without eggs. So while I was in Huntington, I made sure to take advantage of getting myself a delicious, red velvet, vegan cupcake. Sweet Friend, Wonderful Time
June 30- July 2
Another spontaneous three day trip. The four hour drive is nothing when that means I get to visit my friend and enjoy the cool weather. I drove from Clovis to Huntington on the morning of June 30th and was welcomed with open arms when I get to the Naughton household. My trip included yummy vegan food, lots of laughs, sunsets, cupcakes, beautiful bike rides, and a very well needed beach day. Take a look at some photos to get a little taste of the trip!
HIGH Fitness Class
06/29/17 – Thursday
6am. Let me tell you, this is pretty early for your girl! But it’s totally worth waking up early, watching the sunrise, and exercising with a dearly missed friend! I had no idea what I was getting myself into when I signed up to take this HIGH fitness class. Cassidy Jones reached out to me saying that she’d love for me to join her and that she thought I’d enjoy this type of workout. Well she was darn right! Although it was difficult at times and I’m totally sore right now, there was such high energy (no pun intended) and it was overall a wonderful workout (I can tell because my legs feel like jello and I was covered in sweat)!
I believe anyone can take this class and that everyone should at least give it a try (also the first class is free so why not?!) It’s a different type of workout that will leave you sweaty and sore, but think about how fit you’re getting! I’ll be back in Clovis middle July if you want to go once or twice a week together 🙂
What is it?
You’re probably asking yourself, “What is HIGH fitness?” Well, according to highfitness.com, they state it as, “HIGH fitness is a hardcore, fun fitness class that incorporates aerobic interval training with music you love and intense easy to follow fitness choreography. It combines FUN (pop songs of old and new that everyone knows and love) with INTENSITY (interval plyometrics and cardio) with CONSISTENCY (each song has specific simple moves taught the same by all instructors). Together they make a recipe for success, repeat participation and results! HIGH fitness produces a high caloric burn and full-body toning through its carefully formulated choreography that alternates between intense cardio peaks and toning tracks. Get addicted to being fit!
Things to expect in a HIGH fitness class:

It Never Gets Old

There’s nothing like a day in Yosemite with good company and a warm smile. On this beautiful Monday, I met Jess Snow in Oakhurst where we set out for a little adventure. We headed up and through the gate (I have a pass so feel free to explore Yosemite with me during summer!) and then through the tunnel. I wish I could put in words the jaw dropping affect that overcomes you when you lay eyes on the view of El Capitan, Half Dome, and Bridalveil Falls. But I can’t so I guess you’ll have to see it for yourself 😉 And when you think the view can’t be better, you remember you’re viewing God’s creation with your friend and then life seems complete.
So just a little fun fact about El Capitan that I was trying to remember and tell Jess today but was lacking all the information, involves bears and a worm. This was a little tale told by the Yo-Ho-Me-Tik Indians.
“One day Grizzly Bear and her two baby cubs were taking a walk by the Merced River. They had been digging up roots, searching for bugs and worms. So, they were very tired. They approached a large flat rock along the Merced River and laid down to rest for awhile. The following morning, Grizzly Bear and her two baby cubs awoke. They looked around curiously. Overnight, that flat rock had grown into a large mountain and was high enough to touch the moon. Because of this, they could not find their way to Ahwahanee. So they waited.
The old bird and animal people of Ahwahanee were stunned to see that the mother bear and her cubs were on top of the rock. They wanted to help the mother bear and her cubs, but no one could reach them. They all tried to climb it, but could not reach the top. Mouse tried first, but he could not climb even half of the way. Rat was next. He climbed a little higher. Then Mountain Lion, Fox, Crow and many others tried. But not one could climb to the top of the rock. All of the animal people were discouraged! How could they help the bears down from the rock?
At last, after all the rest had failed, here came Too-Tock, the green measuring worm. “I can climb the rock to save the bears!,” Worm said. They all laughed at the little worm, but the little worm tried anyway to prove himself right. As he climbed he sang a little song. He had been climbing for days until at last he had reached the top of the rock. But it was too late. He had not been able to save the bears, because they had starved to death.
Too-Tock brought a rib bone down from the top to prove he had made it. They were all stunned to see him with the rib bone. They danced around and held a memorial. Since then, the great rock has been called Too-Tock-Awn-oo-Lah in honor of the little worm.” 1
(However there have been several myths that the bears were rescued by the little worm as well)
Want another one? Okay! Here is the myth of Bridalveil Falls.
“The vast ravine of Yo Semitee, formed by tearing apart the solid Sierras, is graced by many waterfalls raining down the mile-high cliffs.” The Indians used to tell this legend about the one called Bridal Veil Fall.
Hundreds of years ago, in the shelter of this valley, lived Tu- tok-a-nu-la and his tribe. He was a wise chief, trusted and loved by his people, always setting a good example by saving crops and game for winter.
While he was hunting one day, he saw the lovely guardian spirit of the valley for the first time. His people called her Ti-sa-yak. He thought her beautiful beyond his imagination. Her skin was white, her hair was golden, and her eyes were like heaven. Her voice, as sweet as the song of a thrush, led him to her. But when he stretched his arms toward her, she rose, lighter than a bird, and soon vanished in the sky.
From that moment, the Chief knew no peace, and he no longer cared for the well-being of his people.
Without his directions, Yo Semite became a desert. When Ti-sa-yac came again, after a long time, she wept because bushes were growing where corn had grown before, and bears rooted where the huts had been. On a mighty dome of rock, she knelt and prayed to the Great Spirit Above, asking him to restore its virtue to the land.
He granted her plea. Stooping from the sky, the Great Spirit Above spread new life of green on all the valley floor. And smiting the mountains, he broke a channel for the pent-up snow that soon melted. The water ran and leaped far down, pooling in a lake below and flowing off to gladden other land.
The birds returned with their songs, the flowering plants returned with their blossoms, and the corn soon swayed in the breeze. When the Yo Semitee people came back to their valley,they gave the name of Ti-sa-yac to what is now called South Dome. That is where she had knelt.
Then the Chief came home again. When he heard what the beautiful spirit maiden had done, his love for her became stronger than ever. Climbing to the crest of a rock that rises three thousand feet above the valley, he carved his likeness there with his hunting knife. He wanted his tribe to remember him after he departed from the earth.
Tired from his work, he sat at the foot of Bridal Veil Fall. Suddenly he saw a rainbow arching over the figure of Ti-sa-yac, who was shining from the water. She smiled at him and beckoned to him. With a cry of joy, he sprang into the waterfall and disappeared with his beloved.
The rainbow quivered on the falling water, and the sun went down.”2

Lil Update!
For one, PLEASE go watch “What the Health” on Netflix right away! It’s an inspiring and informative documentary on the foods we eat today including protein assumption, negatives of the meat industry, and success stories. Go watch it!

Naomi Appreciation Post

You know those people who can always make you smile even on the hardest days? Or those friends who give you flowers with notes on them just because? Or create art just for you? Those friends who care more about you than themselves at times?
Well I am so blessed to have Naomi Wu. She is a light in my world and an amazing friend. This post is solely dedicated to her.
Naomi. Where do I start? We first met in our First Year Psychology Seminar class where we freaked out about what we wanted to do with our lives and realized that we were going to be in school forever. This bond over Psychology propelled our relationship and started something greater than what I imaged. Today we are still in psychology courses as well as working together on an experiment and I wouldn’t want it any other way.
This girl is inspiring. She is truly a perfect creation from God. Her smile radiates and when you see it you can’t help but smile yourself. Her laugh is contagious and her loving personality is something I strive to have. She is always willing to help me, listen to my rants and problems, are cares for me endlessly. What more could you ask for in a friend? She exceeds the word friend actually. She is my sister and close friend that I am so honored to have. As I write this my eyes tear up. I wonder why God decided to bless me, little old me, with such a sweet, caring individual when he could have placed anyone in her life to become close with. God is truly amazing and so is Naomi. This is only the beginning of a long friendship, but I couldn’t hold in my appreciation for her any longer.
Naomi, thank you for being my friend and sister. I cherish everyday we have together and I look forward to more memories to come. I love you.

The History
This semester I decided to embark on a new journey that would change my life. I heard about this company named Serengetee and began doing research online. Once I read their mission statement, I was hooked. For those of you who don’t know, Serengetee was founded in 2012 by Jeff and Ryan after they studied abroad. While they were traveling, they explored markets and began collecting fabrics from countries like Asia, Africa, and Central America. They soon found a way to use these unique and beautiful fabrics to make a positive change in the world. The fabric purchased from over 25 countries supports artisans, their families, and ancient fabric making traditions. Not only does purchasing fabric from these countries help the culture and the artisans, but the company also gives 10% of their profits back to a diverse range of grassroots causes that work to improve lives in their communities.
My Story
After reading about Serengetee’s mission statement and their heart behind what they do, I began looking into becoming an Ambassador where I applied and was accepted! I then struggled to pick out which shirt I wanted because all the pockets, designs, and background information on the fabrics were all so heartwarming. After, I started communicating with other Ambassador’s and figured out ways we could collaborate and make Serengetee more known to the world. This included photoshoots, bonfires, and hangouts. My main goal was to promote Serengetee by first stating the why of the company, as in why they are so passionate about this brand and the heart behind it. I also learned the Serengetee encourages people to step outside their comfort zone and travel to places unknown. As I am wrapping up my time as being a Serengetee Ambassador, I can say that I am proud to have been a part of this company and I will continue to travel more and spread the word of giving back.
Being an Ambassador for Serengetee has influenced my life by giving back, drawing me closer to other’s, and calling me to now study abroad so I can experience these different cultures for myself.

Fast-Food Vegan Options!
Eating out can be hard as a vegan. Friends want to eat somewhere cheap and want to grab a burger and leave, however, vegans don’t eat any animals or anything produced from an animal. Here are some tips to eating out a vegan:
- Baskin-Robbins: dairy-free and gelatin-free ices and sorbets
- BJ’s Restaurant and Brewhouse: the pizza crust and marinara sauce are vegan! Order a veggie pizza without cheese, and ask for your pizza NOT to be brushed with butter. You can also order spaghetti marinara without meat or cheese
- Blaze Pizza: they offer gluten-free crust as well as Day cheese; try the classic red or the spicy red sauce or a drizzle of BBQ sauce or olive oil and add veggies
- Buffalo Wild Wings: the black-bean burger is vegetarian (not vegan); salad with light balsamic, french, or asian sesame dressing
- Burger King: garden salad, fries, and harsh browns; french toast sticks & dutch apple pie
- Carl’s Jr.: french fries, criss cut fries, hash rounds, hash-brown nuggets; all you can eat salad bar, three bean salad with Italian dressing, raspberry or low-fat balsamic vinaigrette
- The Cheesecake Factory: veggie burger (made with brown rice, farro, couscous, mushrooms, black beans, and onion); penne pasta dish (made with broccoli, oven-dried tomato, roasted eggplant, peppers, artichoke, Kalamata olives, garlic, and pine nuts)
- Chili’s: tostada chips and salsa; veggie quesadillas (replacing the cheese and sour cream with extra vegetables); cadillac fajitas without the meat
- Chipotle: bowl, burrito, taco, or salad without meat, cheese, or sour cream. they offer sofritas (organic tofu braised with peppers and spices)
- CiCi’s Pizza: be sure to ask about the vegan status of each item on your pizza; they also offer pasta and salad buffet with many vegan options
- Claim Jumper: pizzas are vegan as long as you ask without cheese; Chinese salad with spicy peanut dressing
- Cracker Barrel: vegetable plate with your choice of several veggies (including steamed broccoli and a baked sweet potato)
- Dairy Queen: light smoothies are vegan!
- Del Taco: 8 layer veggie burrito, the 1/2lb. bean and cheese burrito, or the value bean and cheese burrito with red or green sauce. Ask for no cheese, no rice, and no sour cream
- Denny’s: oatmeal, the Fit Fare Veggie Skillet (ask for no egg whites), English muffins, bagels, grits, applesauce, fresh fruit, vegetable plates, seasoned french fires, baked potatoes with several vegetable toppings, garden salads with light Italian dressing or oil and vinegar dressing, and sandwiches that can be made with several vegetables options, and the Boca burger
- El Pollo Loco: BRC burrito without cheese ; sides include pinto beans and corn on the cob
- Flames Grill: veggie pattie
- Hard Times Cafe: veggie burger and vegetarian chili (ask for no dairy products in the chili)
- IHOP: hash browns, fresh fruit, frits, sautéed spinach and mushrooms, a plain baked potato, salad with fat-free or regular raspberry vinaigrette dressing.
- Jack in the Box: black beans, potato wedges, seasoned curly fires, and breakfast blueberry muffin oatmeal
- Johnny Rockets: the streamliner (vegan Boca burger with grilled onions, lettuce, tomatoes, pickles, and mustard)
- Little Caesars, Papa John’s, Pizza Hut: all the sauces and doughs are vegan! ask without cheese and choose your veggies on top
- Olive Garden: breadsticks; pasta’s: angel hair, cavatappi, fettuccine, gluten-free rotini, rigatoni, small shells, spaghetti, and white-wheat linguine with vegan marinara sauce; minestrone; salad without croutons or cheese; side of steamed broccoli
- P.F. Chang’s China Bistro: everything can be made vegan, from appetizers such as tofu lettuce wraps to entrees such as Buddha’s Feast
- Pieology & PizzaRev: offers Day cheese as well as gluten-free crust; just ask for no cheese and no meat and load up on the veggies!
- Qdoba Mexican Grill: make a burrito, taco, or salad bowl with: corn or flour tortillas, black or pinto beans, brown or cilantro-lime rice, fajita vegetables, grilled vegetables, potatoes, guacamole, and most salsas; tortilla soup
- Quiznos: guacamole, black olives, lettuce, tomatoes, red onions, and mushrooms (make sure to ask with no cheese and ask for the balsamic vinaigrette); vegan bread either white or wheat or a herb wrap; side garden salad; potato chips
- Red Robin: hummus plate; vegan Boca burger
- Starbucks: sesame noodle dish made with broccoli, carrots, red pepper, snap peas, tofu, pickled cucumbers, and sesame peanuts; dark chocolate desserts; plain or multigrain bagel, class of blueberry oatmeal, the seasonal harvest fruit blent, and the hearty veggie and brown rice salad bowl
- Taco Bell: cinnamon twists; chips and guacamole or salsa; cilantro rice, black or refried beans; Mexican rices; and all salads; DISHES: Bean burrito “fresco style”, the regular black bean burrito without cheese, the veggie cantina power power without sauce; the 7 layer bean burrito without cheese and sour cream; tacos, nachos, crunch wrap supreme and mexican pizza (ask to hold the mean and substitute beans, without cheese or sour cream)

Sushi Lover

(My go-to meal at sushi restaurants // edamame and a cucumber, avocado roll)
You know those things you always crave no matter what time of day it is? Well for me it is pizza, chocolate, and sushi. You’re probably asking yourself, “But wait. You don’t even eat fish.” Correct! But there are still ways of eating sushi and going out with friends while avoiding fish meals. Here is a list of things a vegan can eat at sushi restaurants: avocado roll, cucumber roll (Kappa), avocado & cucumber roll, picked daikon roll (Oshinko), shiitake mushroom roll, white/brown rice, miso soup, edamame, any tofu dishes, salads, any and all veggies, and more depending on what the menu offers!
Time Management
It is so easy to get lost in the busyness of a day or the craziness in life. The stress of not feeling caught up on school or work is usually stemmed out of failure to time manage. However, I use the term “failure” here loosely. You have not failed, but rather lost track of your time. Here are some steps to getting back on track:
- Recognizing that you have lost track of time
- Making a goal list for yourself
- Better grades
- More time with friends
- Earn more money
- Outlining how you will meet these goals
- Study more and earlier for exams
- Don’t procrastinate; finish homework before it is due
- Choosing to work or pick up more hours
- Prioritizing
- School work comes before Netflix, however make sure to take breaks and treat yourself
- Sleeping always sounds better than going to work, but working hard will pay off
- Even though this step can be the hardest and most challenging, once you learn how to properly prioritize, you will enhance your time management immensely
- Applying!
- Now that you have recognized where you are lacking on how to time manage, made a goal list for yourself, outlined how you will better make use of your time, and learned how to prioritize the time you have, you are now ready to go out in the world and get ahead on homework or make more time to hangout with friends!
